It is exactly like a domain: ee site create sub.domain.com --wpredis --php7 (or whatever options you want).
If you are going to use Let's Encrypt certificates make sure your DNSs point both sub.domain.com and www.sub.domain.com to your IP (otherwise you won't be able to use EE to generate and install the certificate for you).
